Chapter 6 EATING AND DRINKING ESTABLISHMENTS*
ARTICLE II. SANITATION REQUIREMENTS.
Sec. 6-9. Walls and ceilings.
(a) Regulation. Walls, ceilings, doors and windows of all rooms shall
be kept clean and in good repair. All walls and ceilings in rooms in which food
or drink is stored or prepared shall be finished in light color. The walls and
ceilings of all rooms or areas in which food or drink is prepared or utensils
are washed shall have a smooth, washable, grease-resistant
surface.
(b) Satisfactory compliance.
(1) Walls, ceilings, doors
and windows of all rooms in which food or drink is stored, prepared or served
are clean and in good repair. Grease marks, dirt, dust and cobwebs are
absent.
(2) Walls and ceilings of all rooms in which food or drink is
prepared or stored are painted with a light colored lead-free paint or other
approved finish and refinished as often as necessary in a manner satisfactory to
the deputy state health officer.
(3) Walls and ceilings of all kitchens,
food preparation areas, dish-washing rooms and sculleries have a smooth,
washable, grease-resistant surface.
