Sec. 6-8. Floors.


(a) Regulation. The floors of all rooms in which food or drink is stored, prepared or served, or in which utensils are washed or stored, shall be of such construction as to be easily cleaned, shall be smooth, and shall be kept clean and in good repair.
(b) Satisfactory compliance.
(1) The floors of all rooms in which food or drink is stored, prepared or served are of such construction as to be easily cleaned, are smooth and are in good repair. In areas where utensils are cleaned or food is prepared, floors are of grease-resistant material which is impervious to water. If floor drains are used, they shall be provided with proper traps and so constructed as to minimize clogging, and the floors shall be graded to drain. All floors are constructed of materials which do not disintegrate readily or liberate dust. Wooden floors containing cracks, holes or broken or poorly fitting planks, or which otherwise fail to be tight, do not comply with this requirement.
(2) All floors are kept reasonably clean and free from litter during the hours of preparing, cooking and serving of food. Dustless methods of floor cleaning are used, or dust-arresting sweeping compounds and push brooms are employed and sweeping compound is not permitted to remain after the sweeping process, All except emergency cleaning is done during those periods when the least amount of food and drink is exposed, such as after closing or between meals.
