Chapter 6 EATING AND DRINKING ESTABLISHMENTS*
ARTICLE II. SANITATION REQUIREMENTS.
Sec. 6-25. Miscellaneous.
(a) Regulation. The premises of all eating and drinking
establishments shall be kept clean and free of litter or rubbish. None of the
operations connected with an eating or drinking establishment shall be conducted
in any room used as living or sleeping quarters or for any other purpose which,
in the opinion of the deputy state health offIcer, would be detrimental to
health, or would substantially affect the quality of food and drink served.
Adequate lockers or dressing rooms shall be provided for employees’
clothing and shall be kept clean. Soiled linen, coats and aprons shall be kept
in containers provided for this purpose.
(b) Satisfactory
compliance.
(1) The premises are clean and free of litter or
rubbish.
(2) None of the operations connected with the establishment are
conducted in any room used as living or sleeping quarters or for any other
purpose which, in the opinion of the deputy state health officer, could be
detrimental to health, or would substantially affect the quality of food and
drink served. Conversely, the rooms used to conduct the operations are not used
for sleeping or living quarters or for any other purpose which, in the opinion
of the deputy state health officer, could be detrimental to health, or would
substantially affect the quality of food and drink served.
(3) Dressing
rooms or adequate lockers, not located in the kitchen, are provided for
employees’ clothing and are kept clean.
(4) Containers are provided
and soiled linens, coats and aprons are kept therein.
