Chapter 6 EATING AND DRINKING ESTABLISHMENTS*
ARTICLE II. SANITATION REQUIREMENTS.
Sec. 6-23. Cleanliness of employees.
(a) Regulation. All employees shall wear clean outer garments
and shall keep their hands clean at all times while engaged in handling food,
drink, utensils or equipment. Employees shall not expectorate or use tobacco in
any form in areas in which food is prepared or served.
(b) Satisfactory
compliance.
(1) The outer garments of all persons, including
dishwashers, engaged in the handling of food, drink or utensils, are reasonably
clean and are used for no other than restaurant duty. Hair nets, head bands or
caps are used.
(2) No employee returns from a toilet to a room in which
food, drink or utensils are handled or stored without first having washed his
hands or begins the preparation of food or drink without first having washed his
hands.
(3) There is no evidence of spitting or of the use of any form of
tobacco by employees in areas in which food is prepared or served.
