Sec. 6-16. Construction of utensils and equipment.


(a) Regulation. All multiuse utensils, machinery and equipment used in connection with the operation of an eating and drinking establishment shall be so constructed as to be easily cleaned and shall be kept in good repair. No surfaces coming in contact with food or drink shall be made of toxic materials; except, that solder containing lead may be used for jointing.
(b) Satisfactory compliance.
(1) All surfaces with which food or drink comes in contact consist of smooth, nonabsorbent, not readily corrodible material, which is resistant to the action of the food and which will not scale or chip.
(2) All surfaces with which food or drink comes in contact are in good repair, free of breaks, corrosion, open seams, cracks and chipped places. Such surfaces do not have internal or V-type threads. The entrance of a rotating shaft into the food-bearing surface is tight-fitting or accessible for cleaning. All joints and seams on food preparation surfaces are smoothed.
(3) All surfaces with which food or drink comes in contact are self-draining and easily accessible or dismantled for brush cleaning and inspection.
(4) All fixtures and equipment not directly in contact with food or drink are so constructed as to be easily cleanable and are in good repair.
(5) No surfaces coming in contact with food or drink are made of toxic materials, such as lead, zinc, antimony or cadmium. Solder containing a minimum of lead is permissible.
(6) New equipment complies with design standards of the state department of health.
(7) Drain racks, trays and shelves are made of not readily corrodible material, and are kept clean.
