ARTICLE II. SANITATION REQUIREMENTS.
Sec. 6-14. Water supply.
(a) Regulation. Water under pressure shall be installed in all
rooms or areas where food or drink is prepared or where utensils are washed. The
water supply shall conform to the regulations of the state board of health and
mental hygiene.
(b) Satisfactory Compliance.
(1) Water under
pressure is installed in all rooms or areas in which food or drink is prepared
or utensils are washed.
(2) The water supply is capable of furnishing an
adequate quantity of water at pressures necessary for optimum performance of
equipment during times of operation.
(3) The water supply conforms with the
construction, operation and sanitation standards of the state board of health
and mental hygiene. The water supply is protected against the backflow of waste
and other water from unapproved sources.
(4) Class III itinerant
establishments are equipped with water connections and operated only when
connected to an approved water supply or are equipped with a tank of at least
fifty gallons capacity.
